In the vat room, nothing is done in haste. Under gravity alone, grapes fall gracefully into small stainless-steel vats, each tailored to fit the size of its corresponding plot. The floating skins and seeds are gently pushed down manually to infuse with their juices, encouraging the gradual extraction of colour, texture and flavours.
The vineyard needs intense energy and steadfast perseverance. We pass through each row of vines more than 30 times in the course of the year, sparing no pains to realise the most honest expression of our terroir. Nature leaves its lasting mark upon the flesh of our ripening berries, and up until the harvest we work hard to serve its demands and contain its power.
